With a French father, Scottish mother and born in Cyprus Ian was raised as a child in Asia. This melting pot of cultures and his passion for food explains Ian’s success not only in the industry but life. Previously being involved with the Culinary James Beard Foundation in New York being nominated in the world’s best hotel and Restaurant Chef's category in 1995. Speaking French, English, Japanese and a healthy amount of Thai his experiences are both entertaining and fascinating.


Has developed concepts and opened hotels and Restaurants in Hawaii, South Africa, Indonesia, United Kingdom, Japan, Thailand, Maldives, Tahiti, Malaysia and Singapore.


Assisted in restaurant designs, concept development, and icon creation. Not forgetting working and cooking for the Royal Family of England and the ruler of Dubai.


Sought after by resorts and hotels around the world. Ian has lived and worked in no less than twelve countries, opened 8 hotels, helped design 3 hotels and created the concept for the worlds first under sea restaurant “Ithaa” on Rangali Island in the Maldives. Furthermore, had his own and appeared on live and recorded television shows in Las Vegas, New York, Los Angeles, Buenos Aires, Tahiti and London.
